Rabbit Bittersweet

Preparation time: 60 minutes

Ingredients: 1 rabbit of 1.5 kilos approximately 50 grams. raisins, 50 gr. pine nuts, 2 bay leaves, 1 sprig of thyme, 1 sprig rosemary, 2 tablespoons of saffron, 1 tablespoon of flour, 2 deciliter of broth, 1 deciliter of Virgin Olive Oil Extra Large Selection Sandúa 1 deciliter white wine, salt and pepper.

Elaboration:

Put the raisins to soak in warm water.

Chop the rabbit, washed and dried.

Heat the Extra Virgin Olive Oil Great Selection Sandúa in a clay pot and brown the rabbit piece simmered.

Sprinkle with flour and orange blossom. Add the white wine and simmer until reduced.

Then add the broth, bay leaf, rosemary and thyme and drained raisins.

Cover and simmer 45 minutes.

Incorporate pine nuts, cook for 10 minutes and serve.
