Pumpkin cookies recipe for Halloween

What can you make for Halloween? Some delicious pumpkin and chocolate biscuits that will serve as a snack for children and dinner for adults, because they are delicious for everyone.
In this way, we forget fast food, and get a healthier and healthier sweet dessert. We also take advantage of the fact that this beautiful vegetable is in season and, therefore, at its best flavour and price!

A great virtue of pumpkin is its versatility. It is delicious in custard, but can also be used as the main base for cakes, biscuits, etc., not to mention as a decorative touch for the Halloween party!

Ingredients to make this spooky pumpkin biscuit recipe:

150g plain or wholemeal flour
1 teaspoon baking powder
400g pumpkin
100g brown sugar
1 tablespoon baking powder
1 egg
125 ml. of extra virgin olive oil Capricho by Sandúa Arbequina
Cinnamon and nutmeg (optional)
Chocolate chips for decoration

How to prepare the homemade pumpkin biscuits recipe:

First we have to cook the pumpkin in water, so that it softens. So we peel the vegetable, remove the seeds and pour the pumpkin flesh into boiling water. It will be ready in about 20 minutes. It should be tender.

Then drain the pumpkin and mash it to obtain a purée as fine as possible. Place this puree in a bowl and add the rest of the ingredients one by one. The egg and the extra virgin olive oil Capricho by Sandúa Arbequina. This is a top quality oil obtained from the olives that Sandúa grows in its own olive groves in the south of Navarre and is ideal for making any type of dessert due to its sweet taste with an almond finish.

After the liquid ingredients come the solid ingredients. Add the brown sugar (we always like it better for its flavour and quality), the sifted flour with a teaspoon of baking powder or bicarbonate to the previous dough. Add the chocolate chips and the spices. Cinnamon, a teaspoon and we also suggest a touch of nutmeg, it goes great with sweets and will give a different touch to these pumpkin biscuits.

Of course, you can substitute wheat flour for oat or corn flour to avoid intolerances. The result will be just as delicious.

Mix all the ingredients well and knead. When you have a compact ball, roll it out on a floured surface and use a pastry cutter (the mouth of a jar can also be used) to shape it.

Finally, preheat the oven to 180º. Then place the biscuits on the tray, covered with greaseproof paper, and leave them to bake for about 10 minutes, without air!

After this time, when they are golden brown, take them out of the oven and leave them to cool. Place them on a serving dish decorated with the scariest decorations you can find at home and you’re ready to celebrate Halloween at home with the family!

Cooking tip: if you like coconut or nuts, you can add these ingredients to the dough. Pumpkin biscuits with coconut or pumpkin biscuits with walnuts or hazelnuts are also a great option!
